Apple Butter Pork Tenderloin with Mustard Cream Sauce
 
Serves 4
 
Ingredients:
 
1 M&M Apple Butter Pork Tenderloin
1 tbsp (15 mL) olive oil
1 tbsp (15 mL) butter
1 tbsp (15 mL) diced onions
2 small apples, peeled, cored and diced
1/2 cup (125 mL) white wine or apple juice (or a mix of both)
1/4 cup (75 mL) water (if needed)
1 cup (250 mL) cream (heavy)
8 dried prunes coarsley choppped
1 tbsp (15 mL) whole grain mustard
 
Preparation:
 
In a heavy bottomed pan, brown pork and all sides in butter and oil on medium heat. Reserve on plate. Add the onions to the pan and cook on medium heat for 2-3 minutes.

Deglaze the pan with the white wine or apple juice and scrape bottom of pan to include the brown bits in sauce.

Add diced apples and chopped prunes, cook for 5-8 minutes. Add 1/4 cup of water if needed and cook 2 minutes more.

Add cream and mustard; mix well. Cut the pork in slices and place in sauce and cook on medium heat until done.
