Asian Pasta Salad
 
Serves 4
 
Ingredients:
 
2 tbsp (30 mL) each, rice wine vinegar, light soy sauce
2 tsp (10 mL) each, minced fresh ginger root, sesame oil
1 clove garlic, crushed
½ cup (125 mL) vegetable oil
1 (1 kg/2.2 lb) pkg M&M Pasta & Vegetable Salad, thawed
1/3 cup (75 mL) each, sliced green onion, chopped cilantro
3 M&M Teriyaki Marinated Chicken Breasts
½ cup (125 mL) chopped dry-roasted peanuts
 
Preparation:
 
In small bowl, whisk together vinegar, soy sauce, ginger root, sesame oil and garlic. Whisk in oil; set aside.

In large bowl, place M&M Pasta & Vegetable Salad. Add onion and cilantro. Add dressing and toss to coat well. Cover and let rest for 1 hour. Salad should be served at room temperature (may also be warmed).

Cook M&M Teriyaki Marinated Chicken Breasts according to package directions. Cut into strips; stir into salad. Top with peanuts just before serving.
