Chicken Breast Supreme with soft Polenta and Tarragon Green Beans
 
Serves 4
 
Ingredients:
 
4 M&M Chicken Breast Supreme
2 cups (500 mL) M&M Bean and Carrot Medley OR fresh green beans blanched
2 tbsp (30 mL) butter - divided
2/3 cup (150 mL) Finely chopped Shallot or M&M Diced Onions (thawed and dried)
1/4 cup (50 mL) White wine or Chicken Stock
1/2 cup (125 mL) 10% coffee cream
1/4 cup (50 mL) fresh tarragon leaves (or 2 tbs dried)
2 cups (500 mL) Instant Polenta (and milk or chicken stock as package indicates)
to taste Salt and pepper
 
Preparation:
 
Cook the chicken according to package instructions. Cook Polenta according to package instructions.

Cook the shallot or diced onions in 1 tbs of butter until soft on medium heat. Add the white wine and let the alcohol evaporate for 1 minute. Add the cream and reduce for a minute and add the tarragon, reduce the heat to low and keep warm. Sauté the green beans in a tablespoon of butter until warm. Adjust the seasoning of the sauce and polenta with salt and pepper as needed.

Put the plate together: divide the polenta into 4 plates, add a chicken breast half resting on the polenta; add the green beans and spoon sauce over the vegetables and a bit on the chicken breast.
