Mushroom and Pistachio Stuffing
 
This moist and versatile stuffing can be used to stuff M&M Boneless Pork Loin Chops, M&M Boneless, Skinless, Seasoned Chicken Breasts, M&M Turkey Breast Fillets or M&M Apple Butter Pork Tenderloin.

Makes 250 mL (1 cup)

 
Ingredients:
 
1 tbsp (15 mL) canola oil
3 cups (227 g/8 oz) sliced mushrooms
1/4 cup (60 mL) shelled, unsalted pistachios
1/4 tsp (1.25 mL) dried Herbes de Provence (or dried thyme)
1/4 cup (60 mL) fresh bread crumbs
Salt and pepper, to taste
8 M&M Boneless Pork Loin Chops or M&M Boneless, Skinless, Seasoned Chicken Breasts, thawed
 
Preparation:
 
In a large nonstick frying pan, heat canola oil over medium high heat. Add mushrooms and sauté until dry and nicely brown (about 8 minutes).

Remove mushrooms to food processor and add pistachios. Pulse until finely chopped. Place mushroom mixture in a bowl and add herbs, breadcrumbs, and salt and pepper to taste.

Create pocket in each chop/breast by slicing horizontally, without cutting all the way through. Stuff with 2 tbsp (30 mL) of mushroom mixture and fasten with toothpicks.

Broil, grill or BBQ according to package directions. Let rest, tented loosely with foil, for about 5 minutes before serving.

 
Tip(s):
 
We used pistachios but walnuts, pecans (both less expensive) and pine nuts work nicely too.
