Apricot and Bacon Brussel Sprouts
 
Serves 4-6
 
Ingredients:
 
1 pound 450 g fresh brussel sprouts
4 slices M&M Bacon
1/4 cup 60 ml apricot preserve (choose one with as little added sugar as possible)
1/2 - 3/4 cup 120 ml - 180 ml water
 
Preparation:
 
Trim the bottom of the brussel sprouts, remove the outer leaves and cut the bigger ones in quarters, the medium sized in half and leave the smaller ones whole. Rinse with cold water in a colander (no need to spin dry, you will need the humidity left on the the brussel sprouts).

Dice the bacon slices and sauté in a stainless steel pan on low-medium heat until crispy. Remove some of the bacon fat if desired (but not all!). Turn up the heat to medium-high and add the brussel sprouts. Sauté for a minute to coat the vegetables with the bacon fat. Add the water and the apricot preserve, mix thoroughly. Cover and cook 5 minutes on medium heat or until the sprouts are tender but still bright green.
