  Herb and Garlic Cream Cheese Portabellos  
Named for those who want to ‘kick it up a notch’ from routine burger toppings. Here’s an easy-going sidekick to any burger that’s especially good on Veggie, Chicken and Turkey Burgers.

Makes 4

Ingredients:
2 tbsp (30 mL) olive oil
2 tsp (10 mL) balsamic (or 1 tbsp/5 mL red wine vinegar)
1 clove garlic, minced
4 large portabello mushrooms
4 tbsp (60 mL) herb and garlic, or roasted pepper spreadable cream cheese, or flavoured goat cheese
1 tbsp (15 mL) chopped fresh chives
Preparation:
  • In small bowl, mix together oil, vinegar and garlic; let stand for about 15 minutes. Clean and dry mushrooms; remove stems. Brush both sides of mushrooms with oil mixture; place top down on baking sheet (or heavy foil wrap if barbecuing).
  • Dot each mushroom with about 1 tbsp (15 mL) cream cheese. Bake in 425°F (220°C) oven for about 3 minutes or until mushrooms soften and are heated through. (Or, place foil on barbecue, lower lid and cook as above.) Sprinkle with chives. Place portabellos on grilled burgers.
  • Use to top M&M Beef & Filet Mignon Burgers.
