Named for those who want to ‘kick it up a notch’ from routine burger toppings. Here’s an easy-going sidekick to any burger that’s especially good on Veggie, Chicken and Turkey Burgers.

Ingredients:

2 tbsp

olive oil

|
2 tsp

(10 mL)

balsamic (or 1 tbsp/5 mL red wine vinegar)
|

clove garlic, minced
|
|

large portabello mushrooms
|
|
4 tbsp

(60 mL)
|
herb and garlic, or roasted pepper spreadable cream cheese, or flavoured goat cheese
|
|
1 tbsp
|
(15 mL)
|
chopped fresh chives

Preparation:
|
|
|
In small bowl, mix together oil, vinegar and garlic; let stand for about 15 minutes. Clean and dry mushrooms; remove stems. Brush both sides of mushrooms with oil mixture; place top down on baking sheet (or heavy foil wrap if barbecuing).
Dot each mushroom with about 1 tbsp (15 mL) cream cheese. Bake in 425°F (220°C) oven for about 3 minutes or until mushrooms soften and are heated through. (Or, place foil on barbecue, lower lid and cook as above.) Sprinkle with chives. Place portabellos on grilled burgers.
