Top-Notch Tomato-Pesto Topping
 
Named for those who want to ‘kick it up a notch’ from routine burger toppings. Here’s an easy-going sidekick to any burger that’s especially good on Veggie, Chicken and Turkey Burgers.

Makes about 6

 
Ingredients:
 
2 large tomatoes
1/3 cup (75 mL) commercial basil pesto*
2 tbsp (30 mL) grated Parmesan cheese
 
Preparation:
 
Slice tomatoes about 1/2-inch (1 cm) thick. Place on lightly oiled baking sheet (or heavy foil wrap if barbecuing).

Spread 2 to 3 tsp (10 to 15 mL) pesto on each tomato slice. Sprinkle each with 1 tsp (5 mL) cheese. Place under broiler 1 minute or until cheese lightly browns. (Or, place foil on barbecue, lower lid and cook until tomato is hot.) Place pesto tomatoes on grilled burgers.

 
Tip(s):
 
*NOTE: To make pesto, in food processor purée 1 cup (250 mL) packed fresh basil leaves, 2 tbsp (30 mL) fresh parsley, 1 large clove garlic, 1/4 cup (50 mL) each: pine nuts, grated Parmesan cheese. Drizzle in about 1/4 cup (50 mL) olive oil until smooth.
