Ingredients:

coconut milk
|
|
|
4 cups
|
M&M Rice & Vegetable Medley, thawed
|
|
|
1 cup
|
M&M Peaches & Cream Corn, thawed
|
|
|
1/2 cup
|
cup green onions, thinly sliced
|
|
|
|
salt, to taste
|
|
|
|
|
Preparation:
|
|
|
In a heavy saucepan, add the green onions to the coconut milk and bring to a boil on medium high heat. Reduce to medium. Add the rice and mix well. Add the corn and a pinch of salt. Warm through.
Serve with your favourite M&M fish, Maple Salmon Skewers or Peanut Chicken Satay.
