Curried Turkey Meatballs
 
Spice it up a bit with this easy curry recipe. Serve on a bed of couscous or M&M Rice & Vegetable Medley for a meal that's out of the ordinary.

Serves 4-6.
 
Ingredients:
 
1 cup (250 mL) M&M Diced Onions
1 tbsp (15 mL) oil
2 tbsp (30 mL) curry powder
1 tsp (5 mL) cumin
1 tbsp (15 mL) dried coriander
1/2 cup (125 mL) coriander leaves, washed
1 can (796 mL/28 oz) crushed tomatoes
1 can (796 mL/28 oz) diced tomatoes
1 pkg (750 g/1.65 lb) M&M Turkey Meatballs*
 
Preparation:
 
In large skillet over medium-high heat, heat oil. Add onions, curry powder, cumin and dried coriander. Sautée until fragrant (about 1 minute).

Add washed coriander leaves; sautée until onions are tender.

Add crushed tomatoes, diced tomatoes and meatballs to skillet. Simmer on medium-high heat for 30 - 45 minutes, or until meatballs are heated through.

* You can substitute 4 cubed M&M Boneless, Skinless Chicken Breasts for the meatballs.
