Greek Orzo Salad |

Serve this colourful pasta salad with M&M Seasoned Souvlaki Pork Kabobs. Skewered tender, lean pork marinated with Mediterranean seasonings.
Serves 6 to 8

| Ingredients: |

| 2 cups |

orzo pasta |
|
 |
| 1/2 cup |
(125 mL) |
red wine vinegar |
|
 |
| 1/3 cup |
(75 mL) |
olive oil |
|
 |
| 1-1/2 tsp |
(7 mL) |
dried oregano |
|
 |

|
clove garlic, minced |
|
 |
| 1-1/2 cups |
(375 mL) |
chopped tomatoes |
|

| 3/4 cup |
(175 mL) |
each, diced sweet red and green peppers |
|
 |
| 3/4 cup |
(175 mL) |
crumbled feta cheese |

 |
| 1/2 cup |
(125 mL) |
diced red onion |
|
 |
| 1/3 cup |
(75 mL) |
chopped fresh parsley |

kalamata olives, pitted and halved |

| Preparation: |
 |
 |
- Cook pasta in boiling water until al dente. Drain and rinse. Place in large bowl. Whisk together vinegar, oil, oregano and garlic. Stir into hot pasta; set aside.
- Stir in tomatoes, peppers, cheese, onion, parsley and olives. Season with salt and pepper.
- Serve with cooked M&M Seasoned Souvlaki Pork Kabobs.
