Greek Orzo Salad
 
Serve this colourful pasta salad with M&M Seasoned Souvlaki Pork Kabobs. Skewered tender, lean pork marinated with Mediterranean seasonings.

Serves 6 to 8
 
Ingredients:
 
2 cups (500 mL) orzo pasta
1/2 cup (125 mL) red wine vinegar
1/3 cup (75 mL) olive oil
1-1/2 tsp (7 mL) dried oregano
1 clove garlic, minced
1-1/2 cups (375 mL) chopped tomatoes
3/4 cup (175 mL) each, diced sweet red and green peppers
3/4 cup (175 mL) crumbled feta cheese
1/2 cup (125 mL) diced red onion
1/3 cup (75 mL) chopped fresh parsley
16 kalamata olives, pitted and halved
salt and pepper, to taste
 
Preparation:
 
Cook pasta in boiling water until al dente. Drain and rinse. Place in large bowl. Whisk together vinegar, oil, oregano and garlic. Stir into hot pasta; set aside.

Stir in tomatoes, peppers, cheese, onion, parsley and olives. Season with salt and pepper.

Serve with cooked M&M Seasoned Souvlaki Pork Kabobs.
