Think outside of the cone! These crepes make a decadent and pretty dessert… and the possibilities are endless. Use your favourite kind of ice cream and mix and match toppings such as chocolate sauce, maple syrup or fresh fruit.

Ingredients:

all-purpose flour

|
whole wheat flour (or buckwheat flour)

egg

1 tsp

white sugar

1/2 tsp

(2.5 mL)

salt

1-1/2 cups

(375 mL)

milk or water (just enough to make the batter smooth)

(5 mL)

oil (or non-stick cooking spray)

1-1/2 cups

cherry pie filling
|
|
1/2 cup

(125 mL)
|
slivered almonds
|
|
8 scoops
|
|
M&M Vanilla Satin Cream® Ice Cream (or other favourite flavour)
|

Preparation:

|
Mix all the ingredients together; let the batter sit for approximately 30 minutes. Just before using, thin it out with a little bit more milk or water until it is the consistency of whipping cream.
Spray a non-stick, small frying pan with cooking spray or coat with oil and heat pan to medium-hot. Pour enough batter into frying pan just to thinly cover bottom of the pan; flip and cook on the other side when the batter turns from a shiny colour to a dull colour.
Place completed crepes on a plate; separate each crepe with a small piece of waxed paper for ease in separating them.
Let crepes cool. Fill crepes with scoops of M&M Vanilla Satin Cream® Ice Cream; wrap up and top with cherry pie filling and slivered almonds.
