Ingredients:

M&M Rice & Vegetable Medley, thawed

1 cup

(250 mL)
|
dried fruit i.e. apricots, raisins, cranberries and dates

1/2 tsp

(2.5 mL)
|
cinnamon

1/2 tsp

(2.5 mL)
|
ginger (freshly grated or dry)

1/2 tsp

(2.5 mL)
|
cumin powder
|
|
1/2 tsp

(2.5 mL)
|
salt
|

slivered almonds for garnish

Preparation:
|
|
|
Cut the apricots and dates to the size of raisins.
Soak all fruits together in hot water.
Sauté the rice in oil using a large non-stick pan. Add spices and stir well. Add fruit and 1/2 cup fruit water, warm through.
Serve topped with almonds.
