Jewelled Moroccan Tunisian Rice
 
Serves 4
 
Ingredients:
 
1 tbsp (15 mL) olive oil
4 cups (1 L) M&M Rice & Vegetable Medley, thawed
1 cup (250 mL) dried fruit i.e. apricots, raisins, cranberries and dates
1/2 tsp (2.5 mL) cinnamon
1/2 tsp (2.5 mL) ginger (freshly grated or dry)
1/2 tsp (2.5 mL) cumin powder
1/2 tsp (2.5 mL) salt
slivered almonds for garnish
 
Preparation:
 
Cut the apricots and dates to the size of raisins.

Soak all fruits together in hot water.

Sauté the rice in oil using a large non-stick pan. Add spices and stir well. Add fruit and 1/2 cup fruit water, warm through.

Serve topped with almonds.
