Zesty Lime Compound Butter
 
Use this flavourful butter to top any of your favourite M&M vegetables and chicken or pork entrées.

Makes 1/2 cup (125 mL)

 
Ingredients:
 
1/2 cup (125 mL) (1 stick) unsalted butter, room temperature
1 clove garlic, minced
1 tsp (5 mL) dehydrated minced onion
zest of two limes
juice of two limes
1/2 tsp (2.5 mL) salt
2 tbsp (30 mL) fresh chopped cilantro
 
Preparation:
 
Beat butter until creamy. Add all other ingredients and beat to blend.

Remove butter to a piece of plastic wrap and roll into a log, about 1 1/2“ in diameter. Chill butter for 2-3 hours, or until firm.

When ready to use, let butter sit at room temperature to soften slightly, about 15 minutes.

Heat a sharp knife under hot tap water, wipe knife dry and slice butter into coins, reheating knife as required.
