Meatball Stroganoff
 
Ready in 40 minutes!

Serves 4
 
Ingredients:
 
3 cups M&M Italian Style Beef Meatballs
1 pkg Olivieri Fettuccine, cooked according to package instructions
1 cup diced onions, thawed and drained
1 tbsp olive oil
1 tbsp butter
4 cups sliced mushrooms
1/3 cup white wine
1/4 cup dry sherry or Xérès
2 cups beef broth
2 tsp Worcestershire sauce
2 tsp corn starch, mixed in a little bit of cold water
1/2 cup sour cream
fresh dill or fresh parsley, chopped for garnish
 
Preparation:
 
Brown the meatballs in a tbsp of oil in a large pan and reserve. In the same pan, add the rest of the oil and butter and sauté the onions for a few minutes.

Add the mushrooms and season with a bit of salt. Sauté on medium high heat until the mushrooms have let out their juices and the liquid has evaporated.

Add the white wine and sherry and boil for a minute or two. Add the broth and Worcestershire sauce and bring to a boil.

Reduce the heat and mix in the cornstarch, let thicken without boiling. Add the meatballs and warm through. Mix in the sour cream and adjust the seasoning.

Serve over noodles and sprinkle with fresh dill or parsley.
