Monterey Chicken Grill Sandwiches |

Here’s a hearty sandwich with a Mexican flare – topped with guacamole and salsa-like tomatoes and onion. If desired, add chopped fresh coriander (cilantro) too.

sliced M&M Monterey Cheese |

kaiser, calabrese or ciabatta rolls |
|
 |

|
butter or margarine, optional |
|
 |
| 3/4 cup |
(175 mL) |
spicy guacamole |

 |
| 2-3 |
|
tomatoes, sliced |

| 3/4 cup |
(175 mL) |
sweet onion, thinly sliced |

| 1 cup |
(250 mL) |
shredded Iceberg lettuce |

| Preparation: |

 |
- Cook chicken according to package instructions. Once chicken has been turned and is almost done, place cheese slices on top. Cook until cheese melts.
- Cut rolls in half, if desired lightly butter and toast in oven or barbecue. Place chicken on rolls, top each with 2 to 3 tbsp (30 to 45 mL) guacamole, tomato and onion slices, and lettuce.
