Pasta Salad

Cold pasta salads are popular summer fare for al fresco meals. This one is great for taking along on a picnic or as a nice change from sandwiches for lunch at work.

Serves 4
 
Ingredients:
 
1 pkg (1 kg/2.2 lb) M&M Pasta & Vegetable Salad, thawed
1 cup (250 mL) cubed ham
1-1/2 cups (375 mL) 1/2-inch (1 cm) cubes Mozzarella cheese
1/3 cup (75 mL) olive oil
3 tbsp (45 mL) red wine vinegar
2 tbsp (30 mL) Dijon mustard
1 clove garlic, crushed
1 tsp (5 mL) dried basil
1 tsp (5 mL) oregano
salt and pepper, to taste
1/3 cup (75 mL) grated parmesan cheese
 
Preparation:
 
In large bowl combine M&M Pasta & Vegetable Salad, cubed ham and Mozzarella Cheese.

In small bowl, whisk together oil, vinegar, mustard, garlic, basil and oregano. Pour over salad and toss to coat well. Season with salt and pepper. Cover and refrigerate for 1 hour to allow flavours to blend.

Stir in cheese and serve.
