Pork Tenderloin with Apples, Prunes and Mustard Cream Sauce

Ingredients:

M&M Apple Butter Pork Tenderloin
1 tbsp
olive oil
1 tbsp
butter
1 cup
diced onions
2 small or 1 large
apple, peeled, cored and diced
1/2 cup
white wine OR apple juice or a mix of the two
1/4 cup
water (if needed)
1 cup
cream (heavy or cooking)
8
dried prunes, chopped
1 tbsp
whole grain mustard
Preparation:
In a heavy bottomed large pan, brown the pork on all sides in the butter and oil on high heat.
Reserve on a plate.
Add the onions to the pan and cook on medium heat for a few minutes. Deglaze the pan with the white wine/apple juice and scrape bottom of the pan to get all the brown bits in the sauce.
Add the diced apples and chopped prunes and cook for 5-8 minutes.
Add 1/4 cup of water if the liquids reduce too much and cook for 2 minutes more. Add the cream and mustard and mix well.
Cut the reserved pork in slices and add to the pan. Cook on medium heat until pork is done.
