M&M Chicken Quesadillas with Grilled Peach Salsa
 
Makes 6 servings

 
Ingredients:
 
4 firm peaches, cut in half, pit removed (not peeled)
1 tbsp (15 mL) olive oil, divided
1 red pepper, diced
3 green onions, finely sliced
1 chipotle pepper in adobo sauce, seeded and finely diced (or 1 jalapeño pepper)
Dressing:
zest of 1 lime
juice of 1 lime
1/2 tsp (2.5 mL) salt
1 tbsp (15 mL) honey
3 tbsp (45 mL) olive oil
 
Preparation:
 
Lightly brush the cut side of the peaches with olive oil. Grill, cut side down (or broil, cut side up) until peaches start to color but hold their shape, about 3-4 minutes (do not overcook or peaches will be mushy). Remove from heat, let cool and cut into small cubes.

Place peaches in a bowl, add red pepper, onions, chipotle and zest.

In a small bowl, whisk salt in lime juice to dissolve. Add honey and whisk to blend. Add olive oil in a stream, whisking constantly. Pour dressing over peach mixture and toss to blend. Serve at room temperature.
