Rainbow Rice Pilaf Salad
 
Serves 8 to 10
 
Ingredients:
 
1 pkg (1 kg/2.2 lb) M&M Rice & Vegetable Medley
3/4 cup (175 mL) diced red onion
1/2 cup (125 mL) each, seedless golden raisins, toasted slivered almonds
1/4 cup (50 mL) each, finely chopped fresh mint and parsley
Salt and pepper, to taste
Dressing:
1/3 cup (75 mL) frozen orange juice concentrate, thawed
1/4 cup (50 mL) each, vegetable oil, lime juice
1 tbsp (15 mL) liquid honey
1/4 tsp (1 mL) ground cumin
 
Preparation:
 
In large bowl, mix together M&M Rice & Vegetable Medley (thawed), onion, raisins, almonds, mint and parsley. Season with salt and pepper.

In glass measuring cup, whisk together orange juice concentrate, oil, lime juice and cumin.

Pour dressing over rice mixture and toss to coat evenly. Serve at room temperature. (May be made ahead. Add fresh herbs and toasted almonds the day several hours before serving.)

 
Tip(s):
 
For hot Rice Pilaf, omit dressing and heat in microwave or covered with foil in 160°C (325°F) oven. Sprinkle toasted almonds over top before serving.
