This ‘garlicky’, sharp and tangy marinade can be used with M&M Sole Fillets, M&M Cod Fillets, or M&M Haddock Fillets. It’s also robust enough to be used as a marinade for M&M beef, chicken and pork products. If used with chicken or pork, marinate for 1 hour; if used with beef marinate for at least one hour or overnight.

dehydrated minced onion

M&M fillets, thawed

Preparation:

Preheat oven to 400°F. Cut 1/4” off tops of garlic heads and wrap individually in foil. Roast garlic in the oven for 45 minutes, or until very soft. Let cool. Squeeze garlic out of skins into food processor. Add all other ingredients (except fillets) and pulse to blend. Let marinade sit at room temperature for 30 minutes before using to allow flavours to blend.
Place fillets in shallow dish and pour half of marinade over them, coat fillets (store unused marinade in refrigerator for up to 1 week). Marinate fillets at room temperature for 20 minutes. Remove fillets from marinade and grill, BBQ or broil according to package directions.
