Pasta & Vegetable Salad with Roasted Red Pepper Oil
 
Serves 4
 
Ingredients:
 
4 cups (1 L) M&M Pasta & Vegetable Salad, frozen
1 cup (250 mL) roughly chopped, drained roasted red peppers (from jar)
1 whole head garlic, roasted
1/4 cup (60 mL) fresh, roughly chopped basil
1/3 cup (80 mL) olive oil
salt and fresh pepper to taste
 
Preparation:
 
Thaw M&M Pasta & Vegetable Salad according to package directions, drain, wrap loosely in clean towel to dry thoroughly, set aside.

Process peppers and garlic in food processor to form a purée. Add basil and pulse to blend. While machine is running, add olive oil in a stream. Season to taste with salt and pepper. Pour into squeeze bottle and refrigerate for 1-2 weeks.

Splash desired quantity onto pasta salad, season to taste with salt and pepper and toss to coat. Serve warm or at room temperature.
