Salad:
|

olive oil, divided

M&M Lean Turkey Sausages, thawed, casings removed (if desired) and thinly sliced
|

M&M Peaches & Cream Corn, frozen or thawed

1/2 cup

diced red onion

red pepper, diced

Preparation:
|
|
|
In a small bowl, whisk all of the ingredients for the dressing. Cover and refrigerate for about 30 minutes to blend flavours before serving.
Heat 1 tbsp (15 mL) olive oil in large, non stick frying pan over medium heat. Sauté sausage slices until nicely coloured, about 6-8 minutes. Remove to large bowl.
In same frying pan, heat 1/2 tbsp (7.5 mL) of olive oil and add half the corn. Sauté until corn starts to colour, about 6 minutes. Remove to bowl with sausage. Repeat with remaining oil and corn, remove to bowl with sausage and let cool completely. Add in the onion and red pepper after the mixture has cooled.
Pour dressing over salad mixture and toss to coat. Serve immediately.
