Sirloin Beef Roast with Savoury Herb Crust |

M&M Seasoned Sirloin Beef Roast, thawed |
|

| 2 |
|
cloves garlic, thinly sliced |
|
 |
| 2 tbsp |
(30 mL) |
smoked paprika (or sweet paprika) |

| 1 tsp |
(5 mL) |
dried thyme |
|
 |
| 1 tsp |
(5 mL) |
rosemary |

 |
| 1 tsp |
(5 mL) |
oregano |

 |
| 3 tbsp |
(45 mL) |
fresh, chopped parsley |

sprigs fresh rosemary |

sprigs fresh thyme |

| Preparation: |

 |
- Drain roast and pat dry with paper towel. Cut slits on all sides of the roast, being careful not to sever the butcher string, and insert garlic slices into slits.
- In a small bowl, mix all of the herbs and spices, except for the fresh sprigs. Rub the spice mixture all over the roast.
- Interlace the sprigs of rosemary and thyme through the butcher string to hold in place. Let marinate 30 minutes to 2 hours.
- Prepare BBQ or outdoor grill according to package directions, turning to grill on all sides. Let rest for 15-20 minutes tented loosely with foil, remove herb sprigs and butcher string, slice and serve.
