Szechuan Crispy Pork with Stir Fry Vegetables
 
Serves 4
 
Ingredients:
 
1 lb (500 g) M&M Barbecue Pork Chops (about 4), thawed
1/3 cup (75 mL) cornstarch
3 tbsp (45 mL) peanut or vegetable oil
1 clove garlic, minced
4 cups (1 L) stir fry vegetables, frozen
1/3 cup (75 mL) soy sauce (preferably naturally brewed)
1/3 cup (75 mL) water or chicken broth
2 tbsp (30 mL) granulated sugar
2 tbsp (30 mL) rice vinegar
1/4 tsp (1 mL) red chile pepper flakes
salt and pepper
 
Preparation:
 
Blot pork with paper towel, thinly slice and season with salt and pepper. Sprinkle pork with cornstarch; toss to coat well. Heat half of oil in non-stick skillet over medium-high heat. Add half of pork; cook, stirring frequently until browned. Remove cooked pork with slotted spoon. Add oil if needed and cook remaining pork; remove and set aside.

Add garlic to skillet; cook, stirring 20 seconds. Add vegetables; cook 3 minutes.

In small bowl combine soy sauce, water, sugar, vinegar and pepper flakes; whisk in cornstarch. Pour over vegetables; cook, stirring about 2 minutes, until sauce thickens. Stir in pork; heat through.
