Wild Mushroom Risotto Cakes
 
Serves as an appetizer for a group, or a side for four people.

 
Ingredients:
 
1 box Fresh Solutions - Four Mushroom Risotto
1/2 cup 125 ml grated parmesan
1/2 cup 125 ml breadcrumbs (Italian style)
to taste pepper
garnish fresh parsley and parmesan shavings
 
Preparation:
 
Mix the mushroom risotto, parmesan and breadcrumbs. Season with pepper. Spread the mixture about ½ inch (1,5 cm) thick onto a well greased foil covered cookie sheet (you’ll have a 9 ½ X 13inch rectangular- small cookie sheet of half of a regular one).

Cook in a 350° oven for 20 to 25 minutes. Flip into a second foil covered cookie sheet and broil for 2 minutes.

Flip onto a large cutting board and cut into small squares for an appetizer or large rounds with a cookie cutter if serving as a side.

Top with a parmesan shaving (if desired) and fresh chopped parsley.
