This classic vinaigrette and marinade can freshen your cooking repertoire for nearly two weeks – it's a perfectly unexpected way to take your M&M favourites, such as Boneless, Skinless, Seasoned Chicken Breast, places you never thought they would go.
Makes 375 mL (1-1/2 cups)
Ingredients:
1/4 cup
(60 mL)
red wine vinegar (or white wine vinegar)
1 tsp
(5 mL)
salt
1-1/4 tsp
(5.25 mL)
sugar
1-1/4 tsp
(5.25 mL)
fresh ground pepper
2 tbsp
(30 mL)
Dijon mustard
2
cloves garlic, minced
1
small shallot, minced (or 5 mL (1 tsp)) dried onion
2 tbsp
(30 mL)
dried tarragon (or any other dried herb)
1 cup
(250 mL)
olive oil
Preparation:
In small bowl, whisk vinegar with salt, pepper and sugar to dissolve. Add all other ingredients except olive oil and whisk to blend.
Add olive oil in a fine stream whisking constantly to form an emulsion.
Pour into squeeze bottle or container. Store in refrigerator for 1-2 weeks.
