NOTE: Prepare steaks from the thawed state. Since appliances vary, the instructions below are guidelines only.
DEFROSTING: Defrost steaks in cold water, or overnight in refrigerator, while still in vacuum sealed packaging. Remove steaks from packaging prior to cooking.
BARBECUE: Preheat barbecue on high. Sear steaks on both sides for 2 minutes each. Turn heat down to medium and continue to cook steaks 8 minutes per side with lid down for medium-rare. Season after cooking.
OVEN: Preheat oven broiler element (500°F/260°C). Lightly oil and spice steaks. Place steaks on a broiler pan positioned 4 to 6 inches from element and broil for 10 minutes per side for medium-rare.
