Serving Information:
NOTE: Prepare fish from the thawed state. Cook until a minimum internal temperature of 158°F (70°C) is reached. Fully cooked Mahi-mahi is off-white in colour and firm to the touch, with large moist flakes. Since appliances and fillet thickness may vary, the instructions below are guidelines only.
DEFROSTING: Defrost fish in cold water, or overnight in refrigerator, while still in vacuum sealed packaging. Remove fish from packaging prior to cooking.
OVEN: Preheat oven to 400°F (200°C). Lightly oil and season both sides
of the fillet (as desired). Place on a non-stick baking tray and bake, uncovered, in the centre of the oven for approximately 15 minutes. Let stand for 2 minutes before serving.
STOVETOP: Preheat pan to medium heat. Lightly oil and season both sides of the fillet (as desired). Place in pan and fry, covered, for about 4 minutes per side, turning once. Let stand 2 minutes before serving.
BARBECUE: Preheat barbecue on medium-high heat (400°F/200°C). To prevent sticking, thoroughly clean and lightly oil grill just prior to cooking. Lightly oil and season both sides of the fillet (as desired). Place on grill and cook with the lid closed for 5 to 6 minutes per side, turning carefully.
