Roasted Garlic and Herbed Mashed Potatoes
 
Serves 6 to 8
 
Ingredients:
 
1 pkg (623 g/22 oz) M&M Mashed Potatoes
1 head garlic, roasted*
1/4 cup (50 mL) chopped fresh parsley
1/4 cup (50 mL) snipped fresh chives
Salt and pepper, to taste
 
Preparation:
 
*To roast garlic on barbecue: Slice about 6 mm (1/4-inch) from top of head of garlic (not peeled). Place on piece of thick foil. Drizzle with a little olive oil. Wrap and place on grill. Place lid down and bake for 50 to 60 minutes or until very soft. (May also be baked in 160°C (325°F) oven for the same amount of time.

Cook M&M Mashed Potatoes according to package directions.

Stir in roasted garlic and herbs. Season with salt and pepper.
